Spring Burgers

What’s better than a gourmet home made turkey burger, grilled and devoured outdoors on the first day of Spring?  The fact that it happened on eastern Long Island on March 20th, outside on our deck!  (hard to imagine, considering today’s weather). These burgers are so incredibly easy to make you simply can’t go wrong.  Here is what I did with two pounds of ground turkey:

2 lbs ground turkey
1/2 cup panko Japanese bread crumbs
1/4 cup Worcestershire sauce
1 egg
3 green hot chilies, finely chopped
A splash / dash / squirt of the following ingredients:
~ Liquid smoke (natural mesquite flavor)
~ Mesquite flavor BBQ sauce
~ Madras curry
~ Chili powder
~ Allspice
~ Salt
~ Pepper

Combine all the above ingredients in a large bowl and mix well. Shape the mixture into 8 quarter pounders and, if possible, refrigerate overnight in stacks of two, in layers of wax paper. Spray the grill with non-stick vegetable oil and grill the patties until, when poked with a toothpick, the juices run clear.  Several minutes before removing the hamburgers from the grill, add the sliced buns to the flames and toast slightly while also topping the patties with your favorite cheese(s) and let it slightly melt.  Remove burgers and buns and begin creating your masterpiece by adding whatever toppings you desire. We used sautéed shitakes and red onions, baby lettuces, and roasted red pepper strips, topped with a squirt of ketchup and Japanese mayo. Unbelievably good burgers tend to disappear very quickly!! 🙂
